Freezing Peas

If you are picking peas fresh from your garden (like I did) you can easily prepare them for an easy side dish straight from your freezer! To start out, remove the ends and rinse the peas thoroughly to remove any bugs or dirt. Meanwhile, start a pan of salted water to boil.

Once the water comes to a rolling boil, carefully drop in the peas in and stir them to make sure they are all down in the water. Be sure to start your timer for 3 minutes as soon as the peas are in the water. While they are cooking, prepare a large bowl of ice water (big enough to stir the peas around.)

As soon as the timer goes off, drain the peas in a colander.

Put the peas into the ice water as quickly as possible. You want to stop the cooking process immediately so that they are crisp and don’t taste soft and cooked.

Drain them again in the colander. Let them semi-dry before putting them in freezer bags.

Soooo Good!! Here’s how my mom cooked these up… She sautéed  yellow peppers and onions in butter, with some salt and pepper, then added the peas and covered them until hot. They were so good!!
